When my schedule gets really busy, and I get stressed out... one of my go-to foods is frozen pizza. I can often get a more flavorful pizza, for cheap. I used to exclusively eat Tostitos party pizza's but decided that as I am an older woman now, my taste's should probably be more refined (although tonight my dinner will consist of a pizza hot pocket and a can of Modelo Especial... and maybe a baked potato, or fresh tomatoes and grapes).
I have a deep and passionate love for pizza, especially flatbread style, so I was excited to see that Kroger (or if you are from the south, the krogers) started carrying their own brand of private selection pizzas. I wasn't sure what pearlini mozzarella was... but it looked good.
Straight out of the box. Of course I had to relocate some of the ingredients a little bit.
I added some fresh basil which my neighbor graciously lets me pick from his herb garden. (See, make friends with your neighbors... especially when they grow stuff). Then pop it in the oven for about 11 minutes at 475, and then ta da!
Hello dinner! I can put away quite a pizza, so eating this whole thing was easy. The pepperoni and the cheese were excellent for a frozen pizza, however the edges of the crust were a little too crispy. I had to leave the pizza in the oven a little longer than it said on the package to get the mozzarella to melt all the way. I think the added fresh basil really helped the flavor of the pizza as well.
What is your go-to cheap quick dinner? Sam can do some amazing things with ramen noodles, and I can make baked potatoes go from dinner to later evening snack in no time.
Frozen pizza is a definite favorite!

Black bean nachos are my go-to easy dinner! :) can of black beans, simmered in some rotel, then put on tortilla chips with some cheese. So good.
